Black Bean Burritos (Belize)

We’ve not been to Mexico in our travels (yet), but we have been to a Belize. As these two countries share a border, it is no surprise that there are many similarities between their cuisines. Here is my take on a black bean burrito.

Five on Five – Sunsets


  • 1 can of refried black beans
  • 1 cup of corn (off the cob)
  • 1 packet taco seasoning of your choice (or, you can make your own)
  • 1 teaspoon of cilantro (fresh is better, but all I had was in a jar)
  • 2 teaspoons of minced garlic
  • 1/2 cup of diced sweet onion
  • 4 ounces of grated sharp cheddar cheese
  • tortillas


  • Preheat oven to 325
  • Combine refried beans, corn, taco seasoning, cilantro and minced garlic.
  • Heat mixture on stove top until warmed through
  • While the beans and corn are heating, dice onion and grate the cheese
  • Wrap tortillas in a damp towel and heat in microwave for 20-30 seconds
  • Lay out tortilla shells and scoop in bean/corn mixture, onion and cheese evenly down the middle of the tortilla
  • Fold/Wrap tortilla and place in baking dish.
  • Repeat steps 4 and 5 until black bean mixture is done.
  • Sprinkle remaining cheese over the top of burritos in baking dish
  • Cook burritos in oven for 10-15, or until cheese is melted and gooey.
  • Serve immediately with toppings and sides of your choice.

This meal is quick, easy and scrumptious! It’s a little taste from south of the border that we absolutely LOVED! In fact, Michael is still talking about them!
